21 Day Fix Creamy Herb Dip


After digging into the 21 Day Fix Eating Plan, I knew this recipe was one of the first I wanted to try.  Although it's listed as a "dressing" when following the recipe the consistency turns out to be more like a dip than a dressing.  Perfect for dipping veggies though!

So let's get started!  You'll need the following ingredients:
1 medium avocado, cut into chunks
1 1/2 C non-fat Greek yogurt
4 Tbsp. herbs of your choice (I used parsley)
3 Tbsp. fresh lemon juice
1/4 tsp. sea salt
1 dash ground pepper
1/3 C extra virgin olive oil





Combine all ingredients, except oil, in a food processor or blender.  After ingredients are mixed into a smooth consistency, slowly add oil.  Mix well.



Keep refrigerated in a sealed container.   Makes a great dip for carrots, celery, cucumbers, or any fresh veggies!  Count it towards your orange containers for the day to keep on track!
