Clean Pumpkin Muffins

Fall is the time for pumpkin everything!!  In our house, we're happy to partake in the fall pumpkin craze! 


Always being on the lookout for healthier options, especially for treats, I came across this recipe for clean pumpkin muffins, which I modified slightly for the ingredients we had on hand and taste.


Ingredients:
2 1/4 C Rolled Oats
1 C Pumpkin
1/2 C Pure Maple Syrup
2 Eggs
1 T Vanilla Extract
3 T Melted Coconut Oil
1/4 C Unsweetened Vanilla Almond Milk
1 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Salt
1 tsp Cinnamon


 Instructions:
1.  Preheat oven to 350 degrees.
2.  Combine all ingredients in a food processor until smooth.
3.  Poor batter into a greased or lined muffin pan.
4.  Bake for 22 minutes, until golden.


These muffins were not only husband, but also child approved!  That's a win in any house!  Enjoy your delicious pumpkin muffin goodness!
